You will find regional foods and special products particular to each prefecture in Shikoku. For example, Kagawa Prefecture identifies itself as the “udon prefecture” to advertise its famous udon noodles. Tokushima Ramen has gained popularity as a type of local ramen noodles in Japan. Ehime Prefecture is famous for tai-meshi (boiled rice with sea bream) and mandarin oranges. In Kochi, a lightly roasted bonito called tataki is a local favorite among other fresh seafood.
